Vijes: The White Town of the Valle

Vijes, is one of the municipalities of Valle del Cauca, being one of the oldest not only in the department but in the country, divided into 9 townships (corregimientos) and 17 rural villages (veredas). It is said that the history of Valle del Cauca was written with lime from Vijes, since many buildings in Cali and throughout the department have used lime quarried from its hillsides. This municipality is well known for its cuisine, represented by dishes such as arroz con longaniza (rice with sausage), empanadas de cambray, and atollado, among others.

Its main economic activities are the mining of marble, lime, clay, and coal, and livestock farming. The main crops grown are coffee, corn, sugar cane, plantain, cotton, beans, cassava, millet, fruits, and vegetables.
